The Walk-In

His pass, week two, and I said nothing for four hours and nineteen minutes, and it was the hardest work I have done in a decade.

He sent a lamb dish at eight fifteen that had been resting twelve minutes when I would have given it eight. He held table six for a full course to let a woman in her eighties finish talking. He put the whole room’s dessert out at once instead of table by table, which I would never do, and which turned the dining room into a single noise for about ninety seconds and was, I understood later, the entire point.

I said nothing. Twice I opened my mouth and Deja looked at me and I shut it. At one point I turned my back on the pass entirely and did a rack of pans that did not need doing, and Wes filmed me doing it, and it will have looked like sulking and it was not. It was the only way I could keep the rule.

At half past ten he came down to my end and said, “Was the lamb four minutes too long?”

“Yes.”

“Right.” He nodded. “It’ll be eight next week.”

That was the whole row. It took nine seconds. I have had worse arguments about a bin.

—

The walk-in was the problem and had been the problem since the Thursday.

Somebody in the production office had ordered week three’s dry goods a week early, on the theory that having things is better than not having things, and forty crates of it had gone into the only cold room in the building because that was where there was floor. On top of that a supplier had sent us forty kilos of hake instead of the turbot on the sheet, and forty kilos of hake will not fit anywhere that forty crates of tinned chickpeas are already sitting.

So at ten past eleven on the Tuesday night, with the kitchen wiped down and the crew gone and Deja outside on the phone to her mother, Simon and I went into the walk-in to take the whole thing apart and build it again.

It is a big one. Two and a half metres by four, shelved on three sides, held at two degrees, with a door that seals on a magnetic lock and opens from the inside on a push bar with an illuminated sign over it.

We moved chickpeas for twenty minutes. Then I said:

“Why did you write it.”

He stopped with a crate against his chest.

“Now?”

“You made the rule. No lens. This is a room with no lens in it and there won’t be another one for five weeks.” I kept stacking. “You said if I asked, I get all of it.”

He put the crate down on the middle shelf and did not turn round.

“All right,” he said.

And then the door shut.

Not slammed. There is a spring-return on it and a closer, and what it did was swing gently, the way it had done forty times that day, and go clack against the magnet, which is a sound I had been hearing all week and had never once listened to.

“That’s fine,” I said.

I went and hit the push bar.

The push bar went in about four millimetres and stopped.

I hit it again with the flat of my hand, hard, and then with my shoulder, and the door did not move, and the illuminated sign over it said PUSH TO EXIT in green, calmly, at both of us.

“Right,” said Simon.

“Don’t say right.”

“I’m going to say right, it’s what I say.” He was already at the door with me, both hands on the bar, and we tried it together, which achieved nothing except that we found out it was not a strength problem. “It’s not jammed in the frame. The bar’s not travelling. There’s something behind the bar.”

“There’s a fire regulation behind the bar.”

“There’s supposed to be.”

I got my phone out. One bar of signal, then none, then none. A cold room is a steel box inside a brick arch under a railway line, and there is a reason nobody has ever had a phone conversation in one.

“Deja’s outside,” I said. “She’ll come back in for her bag.”

“When?”

“When she’s finished with her mother, which could be nine minutes or an hour.” I looked at the thermometer. Two degrees. We were both in whites, both damp through from four hours of service, and neither of us had a jacket. “Security does a round at midnight.”

“Fifty minutes.”

“Fifty minutes.”

He looked at the shelves, and then at the ceiling, and then he did a thing I did not expect, which was to take the two flattened cardboard crate liners off the top shelf and lay them on the floor in the corner furthest from the fan unit.

“Sit on those,” he said. “Not on the floor. The floor’s the coldest thing in here and it’ll take everything you’ve got in about ten minutes. And move every quarter of an hour, and don’t go quiet, and if you start to feel comfortable, tell me.”

“You’ve done this before.”

“I’ve read the safety brief. I read all of them. It’s a character defect.” He sat down on the other liner with his back against the shelf upright, a metre away. “Also I have spent three years signing off risk assessments for a forty-cover restaurant, and the walk-in is the only one that ever frightened me.”

We sat.

The fan unit came on every four minutes and blew two-degree air across the top of the room and it was the loudest thing in the world. After the second cycle he took his apron off, folded it once, and held it out sideways without looking at me.

“Round your hands,” he said. “You’ve got them under your arms, which is the right instinct and it means you can’t use them. Wrap them.”

“What are you going to use?”

“I’ve got my sleeves down and you’ve got yours rolled, which is the difference between the two of us in one sentence and I’d rather not examine it.” He shook the apron slightly. “Take it, Chef. It costs me nothing and it’s ten minutes of you keeping your hands, and in five weeks’ time I would like very much for you still to have them.”

I took it.

We sat a while longer with the fan going on and off and the crates smelling faintly of cardboard and cold fish, close enough that I could hear him breathing and far enough that neither of us had to say anything about that.

After a while I said, “Go on, then. You were about to answer.”

“In here?”

“I’ve got fifty minutes and you’ve got nowhere to be.”

He put his head back against the shelf.

“I was twenty-seven,” he said. “I’d been doing it eighteen months. I had a column called The Second Sitting, six hundred words on the last Saturday of the month, and the whole of my life was one editor, and the editor was Miles Casswell.”

“I know the name.”

“Everyone knows the name.” The fan unit cycled up and then off again. “That spring, Sorrel was the restaurant. Every list, every round-up, a chef of twenty-four, the room on Cloudesley Row with the green tiles. And Miles came to me in about the March and said the column was getting soft, and he was right, it was, because I was twenty-seven and I liked being liked. And he said, go to Sorrel.”

“And you went.”

“I went twice. I paid both times, for what it’s worth, which is nothing.” He rubbed his hands together, once, and stopped, as though he had caught himself performing discomfort. “I wrote fourteen hundred words. He cut it to three forty. And what came back to me the first time had—“

“Had what.”

“Hang on.” He shifted. “No, I’ll do it properly. It had a line in it that wasn’t mine, and I want to tell you about that line, and before I do you need to know that I’m not going to use it to get out of anything, because the thing I did was worse than the thing he did, and I’d rather you heard it in that order.”

I had put my hand up behind me to brace on the shelf and stand, because my legs had gone, and my palm came down on something on the second shelf above the fish that was not a crate and not a box.

It was about the size of a matchbox. It was strapped to the upright with black tape. There was a smooth cold circle of glass in the front of it, and next to the circle a very small light, and the light was not on, and that meant nothing at all, because I have been filmed for two weeks by people whose entire craft is making you forget you are being filmed.

Everything in me went quiet.

“Ines,” he said.

“Don’t say another word.”

He heard something in it and got up fast. “What is it, what’s—“

“Don’t.” I found his sleeve in the half-dark and got hold of it and pulled him towards the door, away from the shelf, and put my mouth close enough to his ear that I could feel how cold he had got. “There’s a camera on the shelf above the fish. Mounted. Taped to the upright. It has not been there all week, because I relabelled that shelf myself on Thursday.”

I felt him understand it. He went absolutely still, the way you do when you put your hand on a pan and your brain has not yet told you.

“How long have we been in here,” he said, to the door.

“Twenty-two minutes.”

“Ines.”

“I know.”

“The door isn’t jammed,” he said. “There’s nothing in a cold room that jams a push bar. It’s a lever and a plate and a magnet.”

“I know.”

Out in the kitchen, very faintly, through two inches of insulated panel, a door went.

Simon put the heel of his hand on the bar and hit it four times, evenly, in the rhythm you use on a pass to call a table away, and four seconds later the door came open and the lights of the arch came in, and Deja stood there with her coat on and her bag over her shoulder and her face changing very fast.

“How long have you been in there?”

“Twenty-six minutes,” I said. “Don’t touch the door.”

“Chef—“

“Don’t touch the door, don’t touch the frame, don’t touch the bar. Go and stand by the pass.” I went back in past her. The cold came up off the floor through my clogs and I did not care. I got my phone out and photographed the shelf above the fish, and the little black box taped to the upright, and the tape, and the label in my own handwriting underneath it, and then I came out and photographed the outside of the door, and the release plate, and the strip of matt black tape across the lower half of it that you would not see from four feet away in a working kitchen and that I had walked past nineteen times that day.

Simon stood in the doorway the entire time with his foot against the bottom of the door, holding it open, saying nothing at all.

“Deja,” I said, when I had finished. “Go home. You didn’t come back for your bag tonight.”

She looked at me for a second.

“I came back for my bag,” she said, “and both of you were standing in the kitchen and the walk-in was shut, and that is what I will say to anybody who asks me, because it is true, and because I have known you four years and I can tell when you want a witness who isn’t lying.”

Then she went.

We stood in a cold kitchen with the walk-in door propped open on a crate between us.

“Tomorrow,” Simon said.

“Tomorrow,” I said.
