Tea and Terms

The order came down from the mill on the sixteenth, in Colm’s own hand, and it was the tightest piece of drafting she had seen out of him in eleven years, which she supposed was a compliment to somebody.

Provisioning, Article Nine, receiving township of Hollow Ash. The subject to take two meals daily at the licensed house on the corner, being the only public kitchen: one at half past eight in the morning, one at six in the evening. Bread, a hot dish, and tea as the house provides. A docket to be signed by the subject at each meal and entered in the house book, the book to be produced to the warden on demand. The township settles monthly. No other dealing of any kind is authorised by this order.

Hesper read it twice, pinned it behind the counter where anybody could see it, and got out the docket book.

Then she made herself a list, because a list was a place to put things.

Cook what she would cook anyway; no special dish, no meat for him she wouldn’t give to Prue. Serve him at the near end of the counter, four feet from the door, where the whole street could see through the window exactly how long it took. Say the number of minutes and nothing else. Take the docket, enter it, initial it. Do not ask him anything. Do not answer anything he asks that is not about food.

And do not, she wrote, at the bottom, in the voice she kept for apprentices, for any reason whatsoever, be interesting.

She looked at that for a while. Then she tore the list into four and put it in the stove, because it was the sort of thing that ends up in a warden’s report, and set the kettle on, and did not watch her hands while they lifted it.

On the seventeenth, at twenty-eight minutes past eight, the door went and it was not him.

“Mistress Quill.” The man was fortyish, square, cheerful in the manner of a gate that has been well hung. “Dabrel. I’m attached to the general. I’m to collect.”

“The order says taken at the house.”

“The order says taken at the licensed house, and the warden confirmed to me this morning at ten past seven that a dish carried out under a signed docket has been taken at the house for the purpose of the article, provided the docket’s entered the same as any other.” He set a docket on the counter with the flat of his hand, the way another man would set down a permit at a checkpoint. It was signed already, in a small upright hand, at the bottom of the printed line. “I’ve a basin. I’ve a cloth. I’ll bring the basin back at six and I’ll not sit down, and I’ve no wish to be a trouble to you.”

“You’ve been up to see Colm before seven in the morning about a basin.”

“I have.”

“And what did he say?”

“He said, and I quote, Dabrel, it’s a bowl of stew, not the north road.” Dabrel looked mildly wounded. “I don’t like a thing to be uncertain, mistress. It’s not much of a habit but it’s the one I’ve got.”

So it was Dabrel on the seventeenth, and Dabrel on the eighteenth, twice each day, with the docket pre-signed and the basin brought back scoured, and Hesper wrote A. Donnacha, breakfast and A. Donnacha, supper into the book four times in that man’s presence and did not once see the man whose name she was writing.

She told herself she was relieved.

Prue Haddon, who had been in at seven every morning for eleven years and had never once ordered anything different, watched all of it over the rim of her cup with the frank interest of a woman at a play.

“He’s hiding,” she said on the second day, when the door had shut.

“He’s being fed. That’s what the order is for.”

“He walked forty miles into a village that would rather have had a plague, and stood on the green and said understood like a man taking a whipping, and now he’s sending his batman for his dinner. He’s hiding.” Prue turned her cup round. “From you, dear. Not from us. He hasn’t the wit to be frightened of us.”

“Prue.”

“I’m only saying what the street’s saying. I’d rather you heard it in here where it’s warm.”

“Drink your tea,” said Hesper, “and eat the second one of those, you’ve had nothing since yesterday and don’t tell me otherwise, I’ve seen your bread bill.”

· · ·Scene break

He came himself on the nineteenth.

Half past eight to the minute; the bell; two steps in, and no further. He had got the coat wrong for the weather and right for the village — the plainest thing he owned, she judged, which was still better cut than anything else on the street. He stood at the near end of the counter with his hands where she could see them, which she noticed, and which she chose not to think about.

“Mistress Quill.”

“General.”

“Not any more, by the paper.” He put the docket down, unsigned this time, and a pen beside it. “I am told I must sign in front of you, or it is not a public dealing. I apologise for the fuss of it.”

“Don’t apologise to me about the treaty. I wrote that part.” She turned the book round for him. “Sign there. Breakfast is bacon and a barley loaf, there’s no choice and there’s no one who gets one. Tea is the house pot.”

He signed. The hand was small and upright and very fast, a hand that had written a great many things it did not enjoy writing.

She gave him the near table by the window because she had decided the street should see it, and he ate the way she had expected and did not enjoy being right about: everything, in order, nothing left, no evident pleasure, quick and quiet and finished in nine minutes. A man who has been hungry inside the last year eats like that. She had fed enough of them on both sides of a line to know it at a glance.

He brought the plate back to the counter himself, which nobody in Hollow Ash did, and set the cup beside it, and then he stood there a moment with an expression she could not place.

“May I say something about the tea.”

“You may say one thing about the tea.”

“Four minutes is a minute too long for that leaf.”

The kettle chose that moment to come up. She took it off, set it down on the trivet, and gave him her full attention, which was a thing that had made grown officers sit up straighter in a tent.

“That leaf,” she said, “is gunpowder green, rolled this side of the river by a woman I have bought from for nine years, and it takes four minutes off water rested to the count of thirty. It has taken four minutes in this shop since the autumn after the treaty. Four minutes is on the board. Four minutes is what half this village calls the usual.”

“Yes,” he said. “And at four minutes it is bitter at the back of the mouth, and you are covering it with the barley bread, which is sweet, so nobody complains.”

“Nobody complains because it is correct.”

“Nobody complains because they are drinking it with bread.” He had not raised his voice at all. If anything he had gone more apologetic, which somehow made it worse. “Three minutes, and the water off the boil for a longer count than thirty. It is thinner. That is the point of it.”

“Thin tea is a fault, not a point.”

“It is a point if the leaf has to do eleven days.” He stopped. Then, evenly, as though laying a card face up and being careful not to slide it: “We had a shortage. For some years. One learns to take a leaf three times and get something out of it on the third, and one finds that the first steep is where the ruin happens. I grant you it is a habit from a thin country. I am not telling you your trade.”

“You are standing in my shop telling me my trade.”

“Yes,” Aurel said. “I am aware of that. It has been pointed out to me before, at some length, that I do not know when to leave a thing alone.”

Hesper looked at him for four seconds, which was longer than she had looked at him on the green.

Then she warmed a second pot, weighed the leaf out at the same four grams to the cup, poured the water at a count of fifty, and timed three minutes on the shelf-clock with her arms folded while he stood there like a man waiting for a court to come back.

She tasted hers first. Then she put the second cup in front of him without a word.

It was thinner. It was also, and she resented every part of this, cleaner at the back of the mouth, and the green came up in it like something opening, and there was no bitterness at all for the bread to have to cover.

“Well,” she said.

“I did not say it was better.”

“You did, at some length.”

“I said it was thinner.” He took a mouthful and set the cup down. “Four minutes is a stronger cup, and this village works outdoors, and a strong cup with bread at half past eight is very probably the correct answer to the question this street is actually asking. Your board is not wrong. Your leaf is being wasted. Those are both true, and I have no business holding an opinion about either.”

“You have no business holding an opinion about the weather, by that paper on the wall.”

“The weather does not file complaints,” Aurel said.

She very nearly laughed. She heard herself very nearly laugh, and she put the lid back on the pot rather harder than the pot deserved.

“Three minutes for the green,” she said. “On the board from Monday, as the general’s, and if anybody asks me why, I shall tell them a man off the coach said my tea was bitter, and they can make of it what they like.”

“That will do you no good at all with your neighbours.”

“Neither will feeding you, and here we are. Your docket’s entered. Your basin goes at six.” She turned away to the scale, which was where she went when a conversation had come too close to the edge of the counter. “Mind the step going out. It’s swollen with the wet.”

· · ·Scene break

Prue waited until the bell had stopped swinging.

“He never said it.”

“Said what?”

“The toast.” Prue set her cup down. “It’s three weeks to the green. Every year, the same words, cups up — to the hand that held. I put it in front of him on purpose, dear. Twice. I said the spring toast was coming, and I said it was a fine thing to have the woman herself pouring your breakfast. I gave that man two clear runs at it and he took neither.”

Hesper stood with the scoop in her hand and found she had stopped weighing.

It was true. She went back through it: five minutes on the green on the fourteenth, and nine minutes of him eating, and eleven minutes of an argument about a leaf, and in the whole of it he had said mistress, and the warden, and four grams, and I am not telling you your trade.

Everyone said it. Within a minute of meeting her, everyone said it: the men at the mill, the carters, the treaty clerks who came through in autumn, the boys who had been eight years old when it ended. The hand that held. She had trained her face for it years ago, a small correct nod, the way a woman nods at a hymn she no longer believes and still knows all the words to.

And the one man in three hundred miles who had been in the tent, who had sat four feet across a table and watched what her hands did, had stood at her counter for eleven minutes and talked about steeping times.

He had not spared her the phrase to be kind. He had not spared her at all. He simply had not reached for it, the way a man does not reach for a tool he has never once found a use for.

“Hesper.”

“I heard you.”

“You went somewhere,” Prue said, comfortably, and turned her cup round on the saucer, and delivered it. “Eleven years I’ve sat at that table, and I have never once seen you make a second pot for anybody, for nothing, to win an argument. Not for me. Not for the warden. Not once. I’d have it back off the board by Monday, if I were you, before this street does the sum I’ve just done.”
