Appearance Three

The charity dinner was held in a hotel ballroom that had been decorated by someone with a great deal of money and no relationship whatsoever to how food actually moved from a kitchen to a table, which meant Luca spent the first hour of the evening not cooking but negotiating with a service corridor twelve feet too narrow for the number of trays that needed to pass through it.

“Whoever designed this room has never once carried a tray of anything,” he said to Enzo, flattening himself against the wall to let a runner past with forty plates of the first course. “This is a room designed by someone who has only ever eaten in it.”

“Most rooms are.” Enzo didn’t look up from the pass he’d built out of two folding tables and sheer stubbornness. “Table nine wants their starter dairy-free, table fourteen wants it without the walnut, and the auctioneer’s already three minutes over his allotted five, which means we’re now plating a hot course for people who are thinking about a silent auction instead of their dinner.”

“Handle it.”

“I am handling it. I’m also handling you, which is the harder job tonight.” Enzo said it without heat, the way he said most true things, and went back to the pass before Luca could ask what he meant by it.

The menu was four courses built to survive a room that wouldn’t be paying full attention to any of them — a beetroot and burrata plate that held its shape under a heat lamp, a short rib that only improved the longer it waited, a dessert simple enough that a junior could finish two hundred of them without a mistake — because Luca had learned, catering enough of these evenings, that the food’s job at a charity dinner was to not be the reason anyone remembered the night badly. He liked the discipline of it, the same way he liked the two-ring burner at Southbank: a problem with a correct answer, unlike almost everything else currently happening in his life.

Through the pass hatch, between courses, he caught sight of Hattie at table three doing something he recognised immediately and had never once seen from this particular angle: leaning in to a hedge fund manager’s wife with an expression of complete, generous attention, laughing at the right beat, being — he understood, watching it — extremely good at her actual, non-contractual job, which was making people feel like the most interesting person in a room for as long as it took to be useful to them. It looked identical to what she did for a camera, and he found he minded that less than he’d have predicted, because underneath it he could see the difference now: this version cost her nothing and gave the room everything, and the other version cost her something and only performed doing the same.

She caught him watching through the hatch and didn’t stop what she was doing at the table, only tilted her head a fraction of an inch, an acknowledgement so small nobody else at either table would have registered it, and Luca went back to the short rib with an unreasonable amount of satisfaction for a man plating meat.

She had arrived in dark green, on Kemi’s arm for as long as it took the first photographers to get their shot. Between the starter and the auction she found her way, with the instinct of a woman who had spent a decade reading rooms for a living, to the one corner of the evening where nobody was performing anything: the corridor outside the kitchen, where Luca had gone to breathe for ninety seconds.

“You look like a man hiding from his own event,” she said.

“I’m hiding from the room, not the event. The room has opinions about seating I don’t share.” He’d shed his jacket for the corridor, sleeves pushed up, and he was aware, in the particular way he was always aware of small physical facts in a kitchen, of how close she’d stood without seeming to notice she’d done it. “You look like you’re supposed to be at table three.”

“I am at table three. I’m allowed ninety seconds away from a hedge fund manager’s opinions about the housing market.” She leaned against the wall opposite him, close enough in the narrow corridor that neither of them had much choice about it. “How’s the auction going?”

“Slowly. Everyone’s very generous when someone else is bidding first.”

“That’s most of philanthropy, in my experience.” She was smiling at that, the real one rather than the camera one, and Luca had learned by now to tell the difference in under a second, which he suspected said something about him he hadn’t fully examined. “You’ve got sauce on your cuff.”

“I know.”

“You’re not going to fix it?”

“I fixed everything fixable an hour ago. That’s not fixable, that’s evidence I did my job properly tonight.” He looked at her properly then, in the low corridor light, close enough that neither of them was performing for anyone, and something in his chest did the thing it had started doing at the festival, quiet and inconvenient and entirely uninvited.

She reached up, without seeming to think about it first, to brush something — dust, lint, nothing, really — from his shoulder, and her hand stayed there a half-second longer than the correction required, and he felt himself lean in, not far, an inch, maybe less, and she hadn’t moved away either, and for a full second the corridor narrowed to just the two of them and the twelve inches of space that hadn’t yet decided what it was for.

“Hattie.” He said her name like the start of a question he hadn’t finished writing.

“I know,” she said, which wasn’t an answer to anything he’d asked, and also was, entirely.

Neither of them moved back. Neither of them moved forward. It was, Luca thought, the longest either of them had ever stood still in front of the other without either one performing something for someone watching, and there was nobody watching, which was the most dangerous part of it.

Her earring — a small drop of green glass, chosen, he’d bet, to match the dress rather than for any practical reason — chose that second to catch on the strap of her bag and come loose, and it fell, and they both went for it at once, and their hands met on the carpet an inch from each other, and that, more than any decision either of them made, was what broke it: the ordinary, undignified scramble for a piece of jewellery, two adults on their knees in a hotel corridor, laughing before either of them could turn the moment back into whatever it had almost been.

“I’ve got it,” she said, straightening up first, earring in her palm, not quite meeting his eyes.

“Good.” He stood too, and put more space between them than the corridor strictly required, and neither of them said anything about what the space was for.

“That would have been a very bad idea,” she said, eventually, fixing the earring back in with the kind of concentration a much simpler task didn’t need.

“Terrible idea. Cameras everywhere. Auctioneer forty feet away.” He was aware he was agreeing too fast, the way you agree with a decision you’ve already half-regretted. “Clause nine exists for this.”

“Clause nine exists for this,” she repeated, and there was something in her voice that wasn’t quite relief and wasn’t quite its opposite. “I should go back to table three.”

“I should go back to the pass.”

Neither of them moved for another two seconds, which felt, to Luca, considerably longer than two seconds, and then she went, and he went, and the auction finished at eleven and raised more than anyone had projected, and none of it felt like the part of the evening that had actually happened.

· · ·Scene break

Kemi found him at midnight, going over the schedule for the following week with the particular thoroughness of a woman who had heard, from somebody, that something had happened in a corridor and intended to manage it before it needed managing.

“You need to initial tonight’s box,” she said, sliding the laminated sheet across. “Appearance three. Kissing clause. For the avoidance of doubt, given that three separate people have mentioned a corridor to me this evening.”

“Nothing happened.”

“I didn’t ask if something happened. I asked you to initial the box.” Kemi’s voice had the flatness of a woman managing a fact rather than a feeling. “It’s cleaner if it says no. It’s cleaner for you, it’s cleaner for her, it’s cleaner for the season. Initial it ‘no’ and we all go home.”

He looked at the box for longer than initialling a box should take a person, and thought about the inch of space in the corridor, and the earring, and the particular way she’d said clause nine exists for this, as if she were reading it off a card rather than believing it, and he initialled the box “no,” because it was true in the sense that mattered to the contract and not true in any sense that mattered to him, which was, he was beginning to understand, the kind of gap the contract had never once accounted for.

Hattie’s copy came back to Kemi an hour later, from Hattie’s own hand, the same box initialled the same word, in the small exact print she used for everything that had to look final.

Enzo found him afterwards, stacking chairs with the last of the crew because it was faster than arguing with the venue’s schedule, and watched him for a while before he said anything.

“You initialled ‘no,’” Enzo said. It wasn’t a question.

“There’s nothing to initial otherwise. Nothing happened.”

“I’ve watched you plate four thousand dishes, Luca. I know what your hands do when you’re telling the truth and what they do when you’re managing a room.” Enzo picked up another chair, unhurried. “You’ve got sauce on your cuff from an hour before the corridor thing happened, which means you didn’t change before you went to find her, which means you weren’t hiding from the event. You were hoping.”

“That’s not—“

“I’m not going to tell anyone. I’m your brother, not the show.” Enzo set the chair down with more care than a folding chair required. “I’m just saying. You wrote ‘no’ on a form. That’s not the same as it being true, and you of all people should know the difference, because you’ve spent two years writing a much bigger ‘no’ on a much bigger form, and it hasn’t made the rest of it stop being true either.”

“You’ve got a plate you’re not garnishing on purpose,” Enzo added, when Luca still hadn’t said anything. “I’ve watched you do it your whole career. You leave the good thing bare because if you dress it up you have to admit you cared how it landed. It’s a very good trick in a kitchen. It’s a terrible trick with a person.”

“When did you get so wise about people. I remember you setting fire to a bin at catering college.”

“I set fire to the bin on purpose, to get out of a shift I didn’t want. That’s not wisdom, that’s motive.” Enzo stacked the last chair and finally let himself grin, which he’d clearly been saving. “I’m not wise about people. I’m just the only one in this family who says the true thing out loud instead of initialling a box about it and going home.”

Luca didn’t answer that, because there wasn’t an answer that wouldn’t have cost him more than he was ready to spend at midnight in an empty ballroom, and he finished stacking the chairs, and drove home, and lay awake longer than the day’s service should have allowed, turning over one inch of corridor space until it stopped fitting in any story he could tell himself about what the contract was for.

Somewhere across the river, he assumed, Hattie was doing something similarly useless with the same hour — rereading a schedule that had nothing new on it, or squaring a stack of papers that didn’t need squaring — and it did not occur to him until he was nearly asleep that he had no actual evidence for this, only the strong and entirely unprofessional wish that it were true.
